Healthy Hummus

If you saw my Healthy Habits post you'd know that I'm attempting to embrace a more healthy lifestyle. That means incorporating veggies in to my diet as often as possible and one of my favourite snacks has quickly become hummus. A super healthy chickpea dip that you can dip veggies in to for an uber nourishing snack or lunch. It's really easy to whip up with the help of a food processor and can be made in advance for an easy midweek snack. As you can see from above I've been enjoying courgette and broccoli with my hummus, scrumptious and delicious!

The Recipe

400g can chickpeas
2 tablespoons olive oil
4 tablespoons water
6 basil leaves
1 teaspoon ground cumin
1 teaspoon of tahini
1 tsp chopped garlic (or minced from a jar)

Simply process all of the above in a food processor and blend until creamy. You may want to add more or less water depending on how creamy you like your hummus. Adding in grains such as pepitas or sesame seeds are a great way to bump up the nutrition. In the above photo I've simply steamed the broccoli and courgette however roast veggies are also a great option.

  9. I love chickpea! Try leaving out the oil, it's healthier and it makes no difference at all! :)
